Why street food varies so much

The biggest factor is how it is cooked. Anything deep-fried (samosa, kachori, pakora, fried momos) carries oil that the same food would not if it were steamed or roasted: steamed veg momos (about 200 kcal for six) and fried momos (about 330) are the same dumpling. A teaspoon of oil is roughly 45 kcal, so it adds up quickly.

The next factor is the toppings. Sev, boondi, sweet chutney and dahi turn a plate of chaat into something heavier than its base. A papdi chaat or sev puri has fried papdi and fried sev before any chutney is added.
