Three things decide most of it: the amount of flour (a bigger piece is simply more food), the fat that goes in or on it, and the cooking method. A roti cooked dry on a tawa is the lightest. Poori and bhatura are deep-fried, and paratha, naan and kulcha usually carry oil, ghee or butter. A teaspoon of ghee or oil is roughly 45 kcal, and butter on a naan can add that several times over.
Maida (refined flour) breads such as naan and kulcha are usually made from more flour per piece than a phulka, which is why a plain naan (about 270 kcal) is more than twice a medium roti (about 120 kcal).
Easy way to read it: when the menu says "roti", ask which one. A phulka, a tandoori roti and a butter naan are all "bread" but sit at about 120, 150 and 320 kcal.
